Avocado Tomato Hummus

I bought a bag on sale recently determined not to let that happen. This avocado dish is fast and fresh.  With only 51 calories per serving, you can enjoy with flax crackers or a gluten free ones of your choice.

Ingredients

  • 15 oz cannellini beans, canned, drained
  • 1 avocado
  • 1/4 cup lime juice
  • 2 garlic cloves
  • 1/2 cup cilantro, fresh, loosely packed
  • 3/8 tsp salt
  • 1/8 tsp cayenne pepper
  • 1 TBS extra virgin olive oil
  • 1/4 cup grape tomatoes, halved
  • 1 TBS cilantro, fresh, chopped
  • 1 TBS onion, chopped
  • 1/2 tsp extra virgin olive oil
  • 1/4 tsp lemon juice

Instructions

  1. Add the following ingredients into a food process. Purée until smooth.
  2. 15 oz cannellini beans, canned , drained
  3. 1 avocado
  4. 1/4 cup lime juice
  5. 2 garlic cloves
  6. 1/2 cup cilantro, fresh , loosely packed
  7. 1/4 tsp salt
  8. 1/8 tsp cayenne pepper
  9. Slowly pour in the 1 TBS extra virgin Olive Oil while the food processor is still running:
  10. 1 TBS extra virgin olive oil
  11. To make the tomato garnish, mix the following ingredients in a small bowl:
  12. 1/4 cup grape tomatoes , halved
  13. 1 TBS cilantro, fresh , chopped
  14. 1 TBS onion , chopped
  15. 1/2 tsp extra virgin olive oil
  16. 1/4 tsp lemon juice
  17. 1/8 tsp salt
  18. Put the hummus into a serving bowl and place the tomato garnish in the center. Serve chilled or at room temperature.
